Today’s Lunch

Today’s packed lunch included cheese quesadillas, salsa, Southwestern black bean and veggie salad, and plain yogurt with diced fresh pineapple.

Southwestern Black Bean and Veggie Salad

  • 1/2 zucchini
  • 1/2 red bell pepper
  • 1/2 c. frozen corn (thawed)
  • 1/2 – 2/3 carrot, diced
  • 1/4 onion, finely diced
  • 1 can black beans, drained and rinsed
  • 1/3 – 1/2 c. red wine vinegar (add as much as tastes good to you)
  • 2 Tbsp olive oil
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 1/2 tsp. oregano
  • salt and pepper
  • 1/2 c. chopped cilantro (optional)

Mix all ingredients. Add salt and pepper to taste. Cover and refrigerate at least an hour before serving.

    • Mmmm, taco salad. I should make that soon! We could definitely be sharing food vibes.
      Don’t worry, I’m sure I’ll be incorporating left overs at some point, lol. Usually though, the leftovers are my lunch! :D

    can i introduce ur blog on mine? would you mind writing up an intro blurb in english/japanese? does not have to be perfect. if they understand u r a foreigner, they’ll be pretty easy on ya. heh heh. at least they tolerate my bad japanese….
