Today’s packed lunch included cheese quesadillas, salsa, Southwestern black bean and veggie salad, and plain yogurt with diced fresh pineapple.
Southwestern Black Bean and Veggie Salad
- 1/2 zucchini
- 1/2 red bell pepper
- 1/2 c. frozen corn (thawed)
- 1/2 – 2/3 carrot, diced
- 1/4 onion, finely diced
- 1 can black beans, drained and rinsed
- 1/3 – 1/2 c. red wine vinegar (add as much as tastes good to you)
- 2 Tbsp olive oil
- 1 tsp. cumin
- 1 tsp. coriander
- 1/2 tsp. oregano
- salt and pepper
- 1/2 c. chopped cilantro (optional)
Mix all ingredients. Add salt and pepper to taste. Cover and refrigerate at least an hour before serving.
