Today’s lunch: Chicken caesar pita sandwich with homemade caesar dressing and fresh pineapple
It’s quite hard to find caesar salad dressing in Japan in my experience. Plus bottled dressings always have lots of artificial ingredients in them, so I always make our salad dressings myself (super easy. trust me.). I’d never made caesar dressing myself, but I recently found this recipe on Kitchen Stewardship and had to try it out (with a few tweaks).
It’s super easy to make (just throw everything in the blender and blend), and it really does taste like normal caesar dressing!
Homemade Caesar Dressing
- 1 raw egg yolk
- 1 tsp apple cider vinegar
- 1 Tbsp lemon juice
- 1/2 tsp mustard
- 1 1/2 tsp Worcestershire sauce
- 1/2 tsp garlic powder
- dash of salt and pepper
- 3/4 c. olive oil
- 2 Tbsp parmesan cheese
- Add everything except the olive oil and parmesan cheese in a blender or food processor and blend.
- Pour in olive oil and blend until smooth and thick. Mix in parmesan cheese and serve on salads, sandwiches, etc.
