Today’s lunch: Monte Cristo sandwich, mini tomatoes, kiwi, almonds and pumpkin seeds Tip: To keep your Monte Cristo sandwich from falling apart, assemble the sandwich the night before, wrap it tightly in plastic wrap, and pop it in the fridge over night. This will compress your sandwich and keep it together when you coat it [...] TGIF! I’m so glad it’s Friday! I spent most of yesterday thinking it was Friday, and then I kept remembering that it was actually only Thursday. Tragic. I know. What’s really tragic are those morning when you wake and think to yourself, “Ah, I’m so glad it’s Saturday!” only to realize two seconds later that [...] Hisa and I finally picked the day to move back to the U.S. and bought our plane tickets over the weekend! We’ll be moving back on December 6th! We had a hard time finding tickets because A) tickets in December are expensive to begin with, and B) one-way tickets are a LOT more expensive than [...] Yesterday I did both weight/strength training at home and had karate class. It’s been awhile since I did both in the same day. I somehow managed to hurt my left wrist with a bad punch, and my forearm is bruised (again), but nothing too bad. Whenever I have an intense workout day like I yesterday, [...] Here’s today’s lunch! My husband made a yummy homemade curry for dinner last night, and there was a lot left-over, so I used that for today’s lunch. Vegetable and chicken keema curry, steamed rice, edamame, and kiwi  |
